    The original Rye whisky
    Our signature Rye Malt Whisky offers depth of flavour and balance.
    Our Danish Rye offers a taste of rye grains which have been grown on the west coast of Denmark for over 2000 years, this rye is deeply rooted in the land and cultural heritage of Denmark.
    Designed with simplicity and a respect for nature at its core, Stauning Rye Whisky is made with local Danish rye and barley using traditional craftsmanship: 100%floor malted in the distillery, double distilled in our small direct-fired copper pot stills and matured in virgin American white oak barrels.

    NOSE

    Freshly baked rye bread and warm spices on the nose.

    PALATE

    On the palate ripe cherries, smoked tea, and citrus fruits.

    FINISH

    Distinctive Danish triple malt whisky
    Our triple malt whisky is the marriage of our signature rye, barley, and heather-smoked barley to create a complex yet smooth taste.
    Matured in a selection of virgin American white oak barrels, and first-fill fortified wine and spirits oak casks, delivering notes of citrus fruits, subtle smoke, and sweet spice.
    Crafted with local rye and barley grains that are 100% fl oor malted and kiln-dried in the distillery.
    Using traditional techniques matched with intention and simplicity, Stauning’s exceptional whisky-making process is a celebration of nature, artistry, and exceptional quality.

    NOSE

    Cereals, apples, cinnamon, orange, and a hint of bonfire smoke on the nose.

    PALATE

    Rounded with sweet orchard fruits,citrus, toffee and vanilla on the palate.

    FINISH

    The finish has notes of chocolate, nougat, oak and lovely, sweet smoke.

    Gently smoked single malt whisky
    Heather and peat smoked single malt whisky, a uniquely Danish style of smoky whisky.
    Crafted with 100% floor malted local barley, kiln dried using local heather and peat, and double distilled in our direct-fired pot stills. Stauning’s whisky-making process balances tradition, simplicity, and intention in this tribute to Denmark’s West Coast terroir.
    This unparalleled approach creates fresh and crisp orchard fruit notes, followed by gentle smoke.

    This whisky is a blend of our single malt and rye malt whisky, made entirely from fl oor-malted grains.
    Named HØST (pronounced “hurst”), which means ‘harvest’ in Danish, this whisky reflects the natural beauty of our local terroir and the season that provides Stauning Distillery with the essential Danish grains to make our whisky.
    Stauning is committed to creating whisky that showcases the elegance and beauty of nature, and each sip of this whisky is a taste of the tranquil terroir of Denmark.
    It is a delicate, smooth, and balanced sipping whisky that is perfect for both beginners and connoisseurs, crafted with a marriage of whiskies aged in American oak and a touch of Port wood.

    For this limited release, our Danish Rye, matured initially in American virgin oak, has been finished in a parcel of hand-selected Oloroso and Moscatel sherry casks from Jerez, Spain.
    This limited edition showcases a rich, vibrant, and fruity side to our classic Danish rye whisky.

    For this limited release, our smoked single malt whisky has been exclusively matured in selected first-fill Tawny port casks.
    The resulting whisky displays a perfect marriage of subtle danish peat and heather smoke balanced with ripe aromatic fruit, a delight for all the senses.

    Stauning Dirty Bastard is part of our Research Series collection, a curated selection of whiskies that highlights Stauning's innovation and creativity in crafting new whisky flavors.
    Dirty Bastard undergoes a triple maturation process, starting in traditional American Virgin oak Barrels, then in parcels of Mescal and tequila casks - a thrilling transformation that gives birth to the whisky we know as Bastard.
    But we don’t stop here. Bastard then boldly steps into the world of beer casks with a finish in stout casks from esteemed Danish Craft brewery's “To Øl” and “Fanø Bryghus”.
    A daring maturation route that gave the Bastard the extra “Dirty” title.

Located in the flat and serene landscape of West Coast Denmark— the place that many Danes come to unwind and get back to nature, Stauning was founded in 2005 by a collective of nine friends setting out to make a difference and bring whisky distilling back to Denmark.
They focused on traditional production methods, such as floor-malting of the local rye and barley grains and using direct fire to heat the small stills, to create whisky reflecting the Danish ethos.
What they created was a purpose-built distillery that embodies modern Danish design and a thoughtfully designed production process.

    100% FLOOR MALTINGAll grains (rye and barley) are locally sourced from farms a bicycle ride away from the distillery. Our Danish rye and barley have been grown on the west coast ofDenmark for over 2000 years, and are deeply rooted in the land and cultural heritage of Denmark.

    FLOOR MALTING

    At Stauning every single grain is floor malted. This means we can keep our eye on every single grain as it germinates. Floor malting is a traditional method of malting, used by very few distilleries, which allows Stauning to craft a timeless whisky style distinguished by its profound depth of flavour and quality.

  • DISTILLATION IN 24 DIRECT-FIRED POT STILLS

    DISTILLATION IN 24 DIRECT-FIRED
    POT STILLS

    Small direct-fired stills bestow the whisky with a sweeter character because of the caramelization at the points where the fire hits the still, known as the Maillard reaction.
    We double distill in 24 direct-fired copper pot stills, first in 16 wash still sand then in 8 spirit stills, each as small as the next.
    This approach, while challenging, adds complexity and depth, producing whisky with rich,bold flavours.
